Fitness Speed Juice

Our little Juicemaster Liam has been busy again creating a new juice for after exercise. Inspired by needing a big refreshment after playing football, he created this apple, orange, lime, carrot and pomegranate juice. This might just be one of his best yet!

Ingredients

  • 1 green apple
  • 1 red apple
  • 1 orange (whole, do not peel it)
  • 1 lime (whole, do not peel it)
  • 1/2 pomegranate (cut in half, seeds left in, not peeled)
  • 1 carrot, whole
  • a few ice cubes
  • Centrifugal or slow juicer

Directions

  1. Cut any of the fruit to fit into your juicer as required
  2. Juice the apples on the slower speed of the juicer
  3. Juice the carrot, pomegranate, orange and lime on the fast speed of the juicer
  4. Stir to combine the juices together
  5. Serve over ice

Vegan Chocolate Orange Mousse

 Vegan Chocolate Mousse

When I was staying at Villa Flow in Bali they made me an avocado based chocolate mousse, and I have recreated it at home, but with some added orange. Orange chocolate has always been my favourite. Do make sure that your avocados are ripe before you make this. Unripe avocado is not a welcome flavour in a dessert. 

Ingredients

  • 150 g dairy-free dark chocolate, plus extra for garnishing (I used “Lindt Excellence 90% cacao” pure chocolate. It is worth checking the label to make sure you don’t get one with sugar as the first ingredient)
  • 2 large ripe avocados
  • 2 tablespoons cocoa powder
  • seeds of 1 vanilla pod (optional)
  • 3 tablespoons maple syrup
  • 1/3 cup almond milk or coconut milk
  • 1/2 tsp orange peel

Directions

  1. Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water. Break the chocolate into the bowl and allow it to melt, then set aside to cool slightly.
  2. Halve and stone the avocados. Scoop out the flesh of the avocados with a desert spoon. Add into a food processor bowl, discarding the skins.
  3. Using the finest grater you have, rasp off the peel of an orange or mandarin.
  4. Add the cocoa powder, vanilla, maple syrup, and almond/coconut milk to the food processor and blend for a few seconds. Scrape down the sides with a spatula, then blend again to ensure that it is well combined.
  5. Pour in the cooled chocolate, then blend a final time until creamy and smooth.
  6. Divide the mixture between six small bowls, and refridgerate for at least 30 minutes.

Thrive Rockmelon Juice

Thrive rockmelon juice

At the food market yesterday Liam decided that he was going to choose all of the fruits and vegetables, and rockmelon was amoungst his selection. This is his  creation this morning.

Ingredients

  • 1 rockmelon
  • 1 orange (whole)
  • 1 lime
  • 2 red apples (whole, washed)
  • 2 pears (whole, washed)
  • Centrifugal or slow juicer

Directions

  1. Cut the rockmelon into slices that will fit into your juicer tube. Remove the hard rind from the melon.
  2. Wash the apples and pears, and remove the stalks. (Only cut them if needed to fit into your juicer tube)
  3. Put the rockmelon, lime and orange (not peeled) through the juicer on the slow speed.
  4. Put the apples and pears through the juicer on the fast speed.
  5. Stir to combine all of the juices together and serve over ice.
  6. Makes 4-5 glasses.

Passionfruit and Orange Sauce

Orange and passionfruit sauce

This is a delicious sauce with a lot of flavour. It suits being paired with big flavored meats such as duck or pork, but my son also likes to eat it with his sweet potato fries and dip his broccoli into it.

Ingredients

  • Juice of 1 large orange
  • pulp of 2 large passionfruit (or 3 smaller ones)
  • 1/2 a red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp honey
  • 2 tsp balsamic vinegar
  • salt and pepper
  • few thyme sprigs
  • ghee or coconut oil

Duck with Passionfruit and Orange Sauce

Duck breast with orange and passionfruit sauce

This recipe pairs a big flavoured sauce with a big flavoured meat – passionfruit and orange sauce with duck breast. Our son also liked dipping the broccoli and turnip fries that we made to go with it in the sauce.

Ingredients

  • 1 or 2 duck breasts (depending on how many you are cooking for)
  • Juice of 1 large orange
  • pulp of 2 large passionfruit (or 3 smaller ones)
  • 1/2 a red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp honey
  • 2 tsp balsamic vinegar
  • salt and pepper
  • few thyme sprigs
  • ghee or coconut oil

Directions

  1. Fry the duck in a little ghee or coconut oil in a medium hot frying pan around 6 minutes on each side – starting with skin side.
  2. Get rid of most of the duck fat from the pan, but retain 1 Tbsp.
  3. Fry onion for a few minutes in the 1 Tbsp of Duck fat. Add the garlic and from for 1 more minute.
  4. Add orange, passionfruit, honey and balsamic vinegar. Cook until reduced to a thick sauce. Season with salt and pepper and remove from the pan. Add thyme and stir.
  5. Serve the orange and passionfruit sauce on the duck breasts, along with sweet potato fries or turnip fries and a salad or broccoli with fried garlic
